Key West Chicken

If I want to grill chicken when I get home from a long day at work, I need a quick, healthy and tasty marinade. I found a recipe for Key West Chicken and was instantly intrigued.  It was easy to make, only needed 30 minutes to marinate and the ingredients are right up my alley.  And not to mention healthy too!

Of course I was going to have to add my own little twist.  I increased one ingredient, decreased another and added two of my own. Can anyone guess which two I added?

Key West Chicken

- 2 boneless skinless chicken breast
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro
- 1 teaspoon minced garlic
- a dash of cinnamon
- salt and pepper to season

Mix all ingredients, except chicken, in tupperware bowl. Add chicken and soak in mixture; put lid on and shake. Marinate for at least 30 minutes (the longer the better).

Heat up grill to medium high heat, wipe on a little oil to grill grate.  Cook chicken on grill for about 4-5 minutes on each side (or until completely cooked).

Serve with brown rice and grilled veggies to complete a nice health meal.
